DAVID THOMPSON X LENNOX HASTIE

On Monday 20th March, celebrated chefs, David Thompson and Lennox Hastie will join culinary forces for a special dinner at Firedoor. The eight-course menu will showcase both chefs’ authentic approach to food with a fire-powered dinner that fuses ideas, techniques and flavours.
David Thompson is considered by many to be the world’s leading authority on Thai cuisine. He owns and operates award-winning restaurant, Nahm (#5, Asia’s 50 Best Restaurants 2017) in Bangkok, as well as Long Chim in Singapore, Perth, Sydney and Melbourne. Nahm is an exercise in balance, with the dynamic interplay of hot and sour, sweet and salty. Long Chim, meaning to come and taste, is Thompson’s casual Thai street food restaurant capturing all the excitement and tastes of the streets of Bangkok.
David will bring flavours from Nahm and Long Chim to Firedoor and create a menu with Lennox entirely powered by wood fire. Expect dishes such as fire powered jungle curry, grilled omelet wrapped in banana leaf and ash baked coconut, with jackfruit custard.
With only 50 spots available, the one-off dining experience will be a true collaboration between two of Australia’s most distinctive chefs. Each course will be matched with drinks designed as a collaborative effort by sommeliers and mixologists from the restaurants.
This dinner is the next installment of the Fireside series, which sees some of the best chefs from around the world cooking alongside Lennox Hastie at Firedoor.

PETER GILMORE X LENNOX HASTIE

On Monday 22nd of August, Peter Gilmore and Lennox Hastie joined culinary forces for a night with a dinner hosted at Firedoor. The 8-course menu celebrated both chefs’ unique approach to food with a fire-powered dinner that fused ideas, techniques and flavours.
In preparation, Gilmore and Hastie worked together at Firedoor in creating a menu that brought together the best of both chefs. Diners enjoyed XO-grilled pippies and 180-day dry aged tartare, a result of blending signature dishes from Quay, Bennelong and Firedoor. As well as new dishes such as marron, with fermented mushroom chawanmushi and a complex umami broth, a dish that combined Hastie’s skill for grilling and Gilmore’s mastery of broths. A Gilmore X Hastie dinner would not have been complete without a play on the infamous snow egg. Diners were able to try the first of its kind, the smoked snow egg.
Each course was matched with drinks designed as a collaborative effort by sommeliers from the three restaurants.
The dinner kick started the Fireside series that will see some of the best chefs from around the world cooking alongside Lennox Hastie at Firedoor.
